(57) Abstract: The present invention relates to a method for producing N-acetyl-D-glucosamine directly from chitin. More specifically, the present invention relates to a method for producing N-acetyl-D-glucosamine by hydrolyzing chitin obtained from crustacean shells using an assembly of chitinase family enzymes. The present invention includes a method for producing N-acetyl-D-glucosamine by enzymatically hydrolyzing chitin using a chitinolytic enzyme assembly containing chitinase and chitobiase. |
