abstract PROBLEM TO BE SOLVED: To provide an esterification reaction of 2-keto-L-gulonic acid which improves the reaction achievement rate. SOLUTION: The production of a lower alkyl ester of 2-keto-L-gulonic acid, wherein monohydrate crystals of 2-keto-L-gulonic acid are precipitated in a water-soluble alcohol solvent to form anhydrous salt crystals. And a method for producing L-ascorbic acid metal salt by lactonizing this ester.
