abstract (57) [Summary] The present invention relates to a method and an apparatus for producing a turmeric processed product, in which not only a dry component of turmeric but also moisture contained in turmeric can be effectively used. A cooling device (6) is provided in an exhaust duct (4) of a turmeric dryer (1). A turmeric rhizome is sliced or crushed using a device provided with a liquefied turmeric liquid recovery dish 7 in the vicinity of the cooler 6 or immediately after passing through the cooler. 1 is a manufacturing apparatus and a manufacturing method in which an evaporated component from turmeric is introduced into a cooling device 6 to be cooled when the dried component is dried in hot air or hot air in a cooling device 6 to liquefy and collect the evaporated component.
