abstract | PROBLEM TO BE SOLVED: To provide a thermostable enzyme capable of improving the heat resistance of a lipolytic enzyme and stably performing a reaction at a high temperature, and enzymatic activity by heat even in heat-pulverization. The present invention provides a method for producing an enzyme, which is less likely to cause a decrease in the production of the enzyme powder and can produce a stable enzyme powder. The heat-stable enzyme is obtained by adding an iron salt and a calcium salt to a lipolytic enzyme having a metal content of 0.5% by weight or less, and the lipolytic enzyme is deionized. Is preferred. Preferably, the iron salt is 0.01 to 50% by weight based on the weight of the enzyme, and the calcium salt is 0.01 to 70% by weight based on the weight of the enzyme. Further, the method is a method for producing an enzyme in which a lipolytic enzyme solution containing an iron salt and a calcium salt is dried to obtain an enzyme powder, and the drying is preferably a spray drying method. |
