abstract PROBLEM TO BE SOLVED: To provide a thermostable enzyme capable of improving the heat resistance of an enzyme in a solution and stably performing an enzymatic reaction at a high temperature, and pulverizing by a heat drying method. In addition, the present invention provides a method for producing an enzyme, in which a decrease in enzyme activity due to heat hardly occurs and a stable production of enzyme powder can be achieved. SOLUTION: The amount of the phospholipid is 0.01 to the weight of the enzyme. -200% by weight and fat-soluble vitamin in 0.01-100 Preferably, the enzyme is a lipolytic enzyme and the fat-soluble vitamin is tocopherol, tocotrienol, retinol, calciferol, phylloquinone, or ubiquinone. Further, the method is a method for producing an enzyme in which an enzyme solution containing a phospholipid and a fat-soluble vitamin is dried to obtain an enzyme powder, and the drying is preferably a spray drying method.
