abstract (57) [Problem] To provide a novel alkaline lipase having a strong activity even in an alkaline environment and in the presence of a high-concentration surfactant. SOLUTION: An alkaline lipase having the following physicochemical properties. (a) Action and substrate specificity: It acts on glycerides such as olive oil and hydrolyzes its ester bonds. In addition, it hydrolyzes ester bonds of various ester compounds to produce alcohols and acids. (b) Optimal pH: The optimal pH is 10.0-11.0. (c) Molecular weight: about 63,000 daltons. (d) Inhibition: Even in the presence of 1% concentration of various surfactants, Maintains a relative activity of 70% or more. In addition, it is not particularly affected by PMSF.
