abstract (57) [Summary] [PROBLEMS] To enable a person with some impairment in swallowing function to swallow safely and easily when ingesting food and to ingest nutrients. SOLUTION: A thickened composition is obtained by mainly using quinoa grains, powder, and processed products thereof, and further adding a thickening stabilizer and dextrin thereto. This thickening composition can be mixed with water to have any consistency and is easy to swallow. In addition, it is possible to ingest well-balanced nutrients contained in quinoa, in particular, high-quality proteins, and it becomes safe and easy to feed nutrition by feeding.
