abstract |
(57) [Problem] To provide a gene encoding a hyperthermostable cyclodextrin synthase. A DNA encoding a hyperthermostable cyclodextrin-forming enzyme is isolated from a hyperthermophilic bacterium. The cyclodextrin synthase encoding code is useful for use in recombinant production of cyclodextrin synthase. The produced recombinant cyclodextrin-forming enzyme has a starch liquefaction ability and a cyclodextrin-forming ability, has excellent heat resistance, and is a cyclodextrin-forming enzyme that mainly produces α-cyclodextrin. It is an enzyme useful for improving the dextrin production process. |
