The present invention discloses a process for immobilising enzymes, at industrial scale, on commercial styrene-divinyl benzene polymer matrix resins which are non-functionalised or functionalised with tertiary amine groups, by forming a stable bond between the matrix, which is activated with a di-aldehyde compound (such as glutaraldehyde) and the enzyme. The enzymes immobilised according to the invention are particularly useful for the industrial production of galactose and tagatose. |
