abstract | A foodstuff or animal feed containing pieces of edible protein in a gelled aqueous medium with a total moisture content of 65 to 95% is prepared. A mixture containing 6 to 10% of protein, 3 to 12% of fat, fermentable carbohydrates, thermally reversible gelling agent, an antimycotic and moisture is formed at a pH of greater than 4.5. The mixture is inoculated with an acid-producing microorganism and fermented until it reaches a pH of at most 4.5. Stable foodstuffs or animals feeds are obtained by this process. |
