abstract | Process for the production of cyclodextrins, characterised in that starch is reacted with the cyclodextrin-glycosyl-transferase produced by Bacillus ohbensis (FERM BP-3180) or produced by strains obtained from Bacillus ohbensis (FERM BP-3180) by mutation or produced by other bacteria into which the gene of B. ohbensis coding for the synthesis of CGTase has been introduced and in that the cyclodextrins are extracted from the reaction medium by ultrafiltration. |
