FIELD OF THE INVENTION The present invention relates to a novel starch branching enzyme for potatoes. a type of starch-splitting enzyme polypeptide (SBE-II), fragments thereof, and isolated DNAs comprising the nucleotide sequence encoding the polypeptide. The invention further relates to vectors containing DNAs, methods for producing transgenic potatoes, and potatoes and applications for the production of starch. The present invention is suitable for altering the number of amylopectin branches in potato starch and the ratio of amylose to amylopectin. Thus, the present invention provides novel starch as a valuable raw material for the processing industry. ŕ |
