abstract In the present invention, a method is described which is suitable for extracting pectins from brightly colored fruits and by-products from fruit processing by obtaining conventional and microwave-intensified extraction, resulting in the production of food thickeners containing antioxidant dye, and their color in powder form 5- can be characterized by higher chromium (C *) and light (L *) values less than 55 according to the CIE standard.
