abstract | The present invention provides a method of increasing the level of fructan accumulating in monocotyledonous cells by producing at least one chimeric gene comprising a plant fructosyltransferase (FTF) gene operably linked to suitable regulatory sequences in monocotyledonous cells; they are transformed with the chimeric gene into monocotyledonous plant cells and then regenerated from them into transgenic monocotyledonous plant cells, thereby increasing the level of fructan accumulating in the cells of the transgenic monocotyledonous plant. The invention further provides chimeric genes comprising a plant fructosyltransferase gene operably linked to suitable regulatory sequences in monocotyledonous cells, transgenic monocotyledonous plants produced by the method of the invention, and seeds thereof.
