titleOfInvention Process for preparing a soluble tea product
abstract A powdered tea extract which is easily and completely soluble in water having a temperature between 5 and 15 DEG C. to form a clear aqueous solution which may be chilled to 0 DEG C. without precipitation of any tea solids, is prepared by making an initial aqueous tea extract from tea leaves, cooling the extract in order to precipitate a portion of the tea tannins which it contains and separating the precipitated tannins by clarification of the extract as by centrifuging, subjecting the separated tannins to at least one oxidation reaction by an oxidising agent, mixing the oxidised tea tannins with the clarified extract and drying the resulting mixture. Preferably the tea tannins are subjected to a first oxidation performed at a pH of 5.5 to 7.5 (adjusted by sodium or potassium hydroxide) employing oxygen, an oxygen-containing gas, hydrogen peroxide, ozone or an ozone-containing gas, and the consequent darkening of the tannins produced by the oxidation is bleached out in a second oxidation reaction employing ozone, an ozone-containing gas or hydrogen peroxide. Volatile aromatics are stripped from the initial aqueous tea extract and, after condensation, are added to the resulting solution of oxidised tea tannins with the clarified stripped tea extract. The specification describes in detail several procedures for the oxidation and bleaching reactions involving packed-columns and autoclaves under continuous, series-connected and batch operations. Thus, the extraction of 45.4 Kg. of tea leaves results in the production of about 5.4 Kg. of tea tannins from the centrifuging operation and about 10 Kg. of clarified concentrate at 5.6% solids concentration are obtained. The tea tannins solids are standardised to a 12% dispersion and, after adjustment of pH, are oxidised and bleached to give 5.7 Kg. of tannin solids at 9.85% concentration. The two liquors are combined and spray dried to yield 15.7 Kg. of tea powder.
