Easily perishable foods such as fish and meat are preserved by storing in ice containing peracetic acid. The ice may contain 0.001-0.1%, preferably 0.01%, of peracetic acid, and may contain also sodium chloride, e.g. sea water may be used in preparing the ice. In freezing an aqueous solution of peracetic acid to prepare the ice, separation is avoided by stirring. |
