abstract | The distribution of tenderizing enzymes in meats is effected by introducing a proteolytic enzyme in a liquid medium into the vascular system of a living animal from which meat is to be obtained, and then slaughtering the animal after a period of time sufficient to permit substantially uniform distribution of the enzyme throughout the animal's body but before the presence or effectiveness of the enzyme has, been eliminated by the animal's body processes. The enzymes are exemplified by papain, bromelin, ficin, trypsin, pancreatin, some cathepsins and milkweed proteinase. The enzyme may be stabilized, i.e. preserved in a condition permitting injection without causing undesired physiological reactions in the animal or lesions in the viscera or carcass, such preservation being accomplished by reversible inactivation of the enzyme involving addition of inactivating materials or removal of activating materials. The enzyme may be purified. Suitable aqueous enzyme solutions are the subject of Specification 913,203. The amount of enzyme preparation introduced may be sufficient to distribute 0.5-150 mg. of enzyme per pound live weight of the animal. The animals concerned are meat-bearing ruminants, hogs and poultry. In Example I is described needle-injecting a preparation of papain in glycerol and physiological saline by the jugular vein into ewes preliminarily treated to cut off circulation to one hind leg, killing the ewes 3 minutes after completion of the injection, removing the hind legs and roasting them for comparative tests of tenderness by a panel. In Example II is described needle-injecting old roosters by the humeral vein with a papain solution, killing the birds 5 minutes after the injection, dressing and cleaning the birds, chilling them for 24 hours, roasting them and testing the roasted birds for tenderness by a panel. |
