abstract In one aspect of the invention 51-nucleotides are obtained by contacting one or more ribonucleic acids and/or oligoribonucleotides at a pH between 4 and 10 with living cells of, or an enzyme system produced by a microorganism belonging to the class Fungi imperfecti or to genus Streptomyces or genus Bacillus in the absence of phosphomonoesterase or in the presence of a phosphomonoesterase inhibitor (which may be the microorganism itself). Specified genera of the class Fungi imperfecti are Helminthosporium, Gliomastix, Verticillium and Fusarium. Deaminase may be present resulting in deaminated nucleotides. Phosphomonoesterase inhibitors include phosphates, arsenates, cyanates, cysteine, glutamic acid, EDTA, zinc ions and cupric ions. An accelerator such as a magnesium salt may be added. The nucleotides may be worked up by chromatography or distribution processes and may be isolated as their salts, e.g. with Ba, Ca, K, NH4, aminoacids, cyclohexylamine or brucine. Yeast nucleic acid is a preferred starting material. The products are used in seasoning food (see Group VI). In another aspect of the invention, nucleosides are obtained by contacting ribonucleic acids and/or oligoribonucleotides, at a pH between 4 and 10, with phosphodiesterase and phosphomonoesterase produced by a microorganism belonging to one of the genera Streptomyces, Helminthosporium, Gliomastix, Verticillium and Fusarium. In Example 1, 51-adenosine monophosphate is deaminated to 51-inosine monophosphate with NaNO2.ALSO:A seasoning comprises, together with an inert carrier, a 51-nucleotide produced by contacting one or more ribonucleic acids and/or oligoribonucleotides at pH between 4 and 10 with living cells of, or an enzyme system produced by, a micro-organism of the Fungi imperfecti (e.g. genera Helminthorporium, Gliomastix, Verticillium and Fusarium), of the genus Streptomyces or of the genus Bacillus (see Group IV (b)).
