| abstract | Meat, meat-containing products and blood are treated with condensed alkali phosphates obtained by direct or indirect spraying in voluminous and readily soluble form and of bulk weight less than 600 g./1. Direct spraying consists in spraying alkali orthophosphate solutions or solutions of condensed alkali phosphate glasses into a hot gas, while indirect spraying consists in first converting alkali orthophosphate solutions into a voluminous orthophosphate calcinate by spray-drying and then converting the calcinate into a voluminous condensed alkali phosphate by further heating. In examples, condensed phosphates are used to maintain blood in a liquid condition, and as an additive to brine for ham pickling, the phosphates being modified in some examples by spray-drying in the presence of caustic soda or by treating the voluminous product with hydrogen peroxide subsequent to spray-drying. Reference is also made to the use of condensed phosphates in the manufacture of sausages. Common salt may be incorporated with the phosphates of the invention either before or after spraying.
