A fermenter comprises an elongated vessel, preferably having its longer axis horizontal, divided into sections through which liquid is passed in succession, at least the majority of the sections are provided with means for introducing liquid and gas such as nutrient liquid and oxygen, and means are positioned between sections for withdrawing gas and at the end of the vessel for withdrawing liquid; the sections may increase in volume toward the end of the vessel to provide the same retention time of the fermenting liquid in all sections. Yeast-contaming liquid is passed from a conventional fermentation vessel 1 into the first section 2 of the fermenter and through a gas withdrawal sphere 3, then through the remaining sections and gas withdrawal spheres until the fermenter is full. Oxygen is delivered from a pump 5 through pipes 6 to the beginning of each section and nutrient solutions are fed via pipes 7 ; provision is made for varying the rates of supply of oxygen and nutrient to the final section 4 wherein ripening is achieved prior to withdrawal of the yeast-containing medium to the centrifugal and filtration plant 11. Gas withdrawn from the spheres passes to a scrubber 9 for removal of carbon dioxide &c. and purified oxygen is returned to the sections as shown.
