abstract Polypeptides are obtained by treating glutens, water-insoluble by-products of food industries and water-insoluble by-products of fermentative processing, without prior denaturation, with aqueous mineral acids below 100 DEG C., followed by vacuum evaporation to an acid concentration of 10-18% calculated as HCl. In place of aqueous acid there may be used gaseous HCl, SO3 or SiF4, which dissolve in the water-content of the proteinaceous materials, so forming acid, or gaseous halogens, ClBr or ClO2, which dissolve similarly to form acids, simultaneously oxidizing the proteinaceous material. The polypeptides may be hydrolysed in known manner to amino-acids, such as glutamic acid.
