abstract A composition for interaction with milk protein in making a pudding comprises a tetraalkali pyrophosphate, an alkali orthophosphate and pregelatinized starch. The ingredients may be 1-4 parts of tetrasodium pyrophosphate, alkali orthophosphate equivalent to 0,5-4 parts of disodium orthophosphate and 10-30 parts of pregelatinized starch. Examples are given of vanilla- and cocoa-flavoured compositions containing confectioner's sugar, pregelatinized tapioca starch, powdered anhydrous tetrasodium pyrophosphate, powdered anhydrous disodium phosphate and colouring matter, a pudding being made by stirring such a composition into milk, preferably chilled to 40 DEG F., and allowing the mixture to set.
