abstract Spoilage by micro-organisms, especially by the "flat-sour" organisms and heat-resisting, hydrogen sulphide- or poison-producing Clostridium spp., of substances intended for animal consumption is prevented by the incorporation of nisin. The nisin may be incorporated in admixture with an edible vehicle.ALSO:Spoilage of foods and beverages other than milk and cheese, e.g. vegetables, cereals, meat, fish, broths, stocks, pies, pastes and alcoholic potable liquids, by micro-organisms, especially the "flat-sour" organisms and heat-resisting, hydrogen sulphide or poison-producing Clostridium spp., is prevented by the incorporation of nisin. Foods adversely affected by heat treatment, e.g. garden peas and sardine and tomato paste, may, after addition of nisin, be heated at 5-10 DEG F. lower than usual. The nisin may be incorporated in admixture with an edible vehicle, e.g. meat broth, milk curd, fish powder, tomato powder, wheat flour, cornflour, soya flour, arrowroot, rice powder, pea powder or cheese.
