titleOfInvention Improvements in or relating to the manufacture of tablet jellies
abstract Tablet jellies, i.e. jellies for dilution in making table jellies, are made by introducing an aqueous dispersion of pectin of methoxyl content 1-8.5 per cent, preferably 4.5-7 per cent, containing a sweetening agent exemplified by sucrose, glucose, invert syrup, honey, sorbitol, and glycerol, in the presence of an edible acid, e.g. citric, malic or tartaric acid, or an acid fruit juice, into an aqueous solution of an edible salt of a polyvalent metal, e.g. calcium chloride, to form a jelly of 68-80 per cent soluble solids content. Fruit flavourings, colouring materials, and buffer salts, e.g. potassium bitartrate and sodium hydrogen phosphate, may be incorporated. The pH of the tablet jelly is preferably such that table jelly made therefrom is of pH 2.8-5.5. Specification 653,527 is referred to.
