[Class 28 (i)] [Also in Groups IV and III] Compounds called hydrophyllic lipins and defined as substances having a lipophile group joined by a carboxylic ester group or an ether group to a hydrophile group in such a manner that the product contains at least one free hydroxy group are first treated with sulphuric acid and/or a soluble acid reacting derivative thereof and then after removal of the latter are treated with an acid of phosphorus or a derivative thereof capable of forming an ester of phosphoric acid. The lipophile group contains at least six carbon atoms and is derived from an alcohol or an aliphatic, cycloaliphatic or hydroaromatic carboxylic acid. The hydrophile group is defined as an aliphatic group having one or more hydroxy groups. Examples of hydrophyllic lipins which are mentioned are: mono fatty acid esters of ethyleneglycol, diethyleneglycol, glycerol and of polyglycerol, octyl and cetylglycerolether, laurylethyleneglycolether and myristyldiethyleneglycolether. The lipophile group may however be derived from caproic, caprylic, capric, hydroxystearic, palmitic, stearic, lauric, melissic, oleic, myristic, ricinoleic and linoleic acid, the fatty acids of cotton seed oil, corn oil, lard, sardine oil, bees wax, spermaceti and carnauba wax, hydrogenated fatty acids, abietic acid, naphthenic acids and the corresponding alcohols. The hydrophile group may be furnished by mono or polybasic aliphatic polyhydroxy carboxylic acids; e.g. mucic, tartaric, saccharic, gluconic, glucuronic, gulonic, mannonic, trihydroxglutaric, glyceric acid, xylose, galactose, fructose, maltose, glucose, sorbitol, dulcitol, arabitol, hydroxyalkylethers of polyhydroxy substances and carboxylic oxidation products of polyglycerols. In examples : (1) a mono- or di-glyceride or a mixture thereof is treated with sodium bisulphite or a mixture thereof with sulphuric acid or phosphorus pentoxide, and the product esterified by means of phosphorus pentoxide after separating, e.g. by settling or centrifuging, the preliminary acid treating agent; (2) a monoglyceride prepared from hydrogenated cotton seed oil is treated with (a) concentrated sulphuric acid, (b) a small quantity of phosphorus pentoxide and (c) (after centrifuging) sufficient phosphorus pentoxide to effect the esterification. The products may be neutralized with alkalies, sodium oxide, sodium, ammonia, sodium or calcium stearate, sodium acetate, sodium ethylate, pyridine, piperidine, aniline, dimethylaniline, quinoline, ethanolamines and bases such as magnesium, aluminium and zinc. The products are described as interface modifiers and may be used to disperse coco powder, and powdered milk and egg white in fatty material. A chocolate mix containing cane sugar, coco powder and coco butter, and a toffee containing coconut stearine, cane,sugar, invert sugar and water are mentioned. An addition of one of the products reduces the viscosity of the chocolate and facilitates the emulsification of the fat in the toffee. |
