abstract After extracting residual sugar and other substances from sugar beet by extraction with water at a temperature below 70 DEG C., as described in Specification 429,718, the pectin is extracted by treatment below 100 DEG C., e.g. at 80-90 DEG C., with simultaneous application of pressure. The extracting agent may be a solution of tartaric acid or calcium bisulphite. The extract may be decolorized, filtered, and dried.
