Preserving nuts; colourings.-Edible nuts in the shell, e.g. Brazil nuts, pecans and filberts, are treated by impregnating their shells with colouring matters which are deposited in the pores of the shells to effect a partial sealing so that the natural oil is retained in the kernel. The colouring also improves the appearance of the nuts. Solutions of Orange I or Naphthol yellow S, alone or in admixture, or tannic acid may be used for the impregnation. Immersion in a cold aqueous solution of the colouring matter of ¢-# per cent strength for 1-1¢ minutes may be employed, the nuts being then dried, e.g. by an air current. Examples are given in the Specification. |
