Condiments; flavourings. - Substitutes for ordinary common salt for flavouring purposes are made by causing soluble salts of organic acids such as formic acid, lactic acid, or acetic acid, or soluble halogen salts such as potassium chloride to react with amino acids, such as glutamic acid, or with acid salts, of amino acids, or mixtures thereof so that the PH value of the product is on the acid side. The mixtures of acids or acid salts may be obtained from animal or vegetable albumen, albuminous products, or decomposition products of albumen by heat treatment with mineral acids; or mixtures capable of yielding or forming the required substances may be employed. Taste-improving or preserving substances such as calcium adipate may also be incorporated. The product may be in the form of solution or it may be a powder obtained by gentle evaporation, for example, in vacuo.
