Treating with gases; treatment by damping; scouring.-Wild garlic is removed from millers' wheat before grinding by subjecting the wheat to a cleaning operation effected by a strong current of air and centrifugal action, the dust being thus removed and the husks of the garlic cloves broken. The wheat is then subjected to the action of a current of nitrogen peroxide or other oxidizing agent that converts allyl sulphide from the garlic into sulphoxide which is removed later by washing.
