A grilling device is configured in connection with a digital controller, first temperature sensor 240 located proximate firepot 210, second temperature sensor 242 located proximate cooking chamber 105, heating element 220, and blower 215 to combust lignin in the firepot while maintaining a temperature in the cooking chamber at or below 150° F for at least 5 minutes. The grilling device comprises an oven with integrated auger feeder system 300 for delivering wood fuel 310 to the firepot. A method of producing cold smoke within a grilling device for cooking food comprises adjusting electrical power provided to a heating element and a blower based on a firepot temperature information to produce a temperature within the firepot in excess of 500°F while maintaining a second temperature in a cooking chamber of the grilling device, which is disposed above the firepot, below 150° F for a period of at least 5 minutes. A grilling device comprises a firepot, a heating element, and a blower; wherein the temperature of the firepot is determined based on the electrical resistance of the heating element, and power to the heating element and blower is adjusted based on the firepot temperature. |
