abstract | A conche 10 comprises a container 11 having an inner surface which is at least partially cylindrical. At least one rotatable shaft 17 is situated inside the container and extends along an axis parallel to the at least partially cylindrical inner surface. At least four shearing elements 19 extend radially from a plurality of axially spaced locations along said shaft towards said inner surface, each shearing element having a proximal end fixed to the shaft and a distal end provided with a shearing tool 21. The shearing elements are substantially uniformly circumferentially spaced around the rotatable shaft and each said shearing tool extends axially by less than about half of the length of the inner surface. At least one of the shearing tools is in the form of a substantially straight blade or wedge extending substantially parallel to the axis of the cylindrical surface. Conventional conches have shearing blades that extend the full axial length of the container. The conche of the present invention provides the shear necessary to liquefy the chocolate masse but uses less energy as the chocolate is not displaced around the conche unnecessarily. |
