abstract |
A meat composition comprises from 1 wt.% to 50 wt.% textured wheat protein, from 0.1 wt.% to 10 wt.% of a particular mixture and from 40 wt.% to 98.9 wt.% meat such as pork or beef. The particular mixture preferably comprises meat powder, beetroot extract and/or paprika powder, caramel and rosemary extract. In addition, conventional additives and/or auxiliary substances can optionally be present. The meat powder may be spray-dried meat and the textured wheat protein may be wheat gluten. The present invention relates also to processes for the preparation of the meat compositions according to the invention. A meat substitute for use as a constituent of the meat composition is also disclosed. |
