abstract A cereal flour that is substantially free of an exogenous enzyme is prepared from grain that has been treated to remove enzymes produced by bacteria or fungus. The treatment may be washing, heating or a mechanical treatment, e.g. polishing. The amount of enzyme on the grain may be tested by milling the grain, extracting the flour in water and measuring the amount of enzyme in the extraction.
