abstract | Grinding (12) fresh and frozen protein source comprising at least 40% poultry material to form a ground protein source, mixing (21) the ground protein source with dry ingredients and water to form a mixture, emulsifying (26) the mixture by cutting in a microcutter under vacuum, extruding (32) the emulsion under vacuum to form a uniform extrudate, conditioning the extrudate by conveying into a steam tunnel (33) and applying turbulent steam to the extrudate, cutting (34) the conditioned extrudate into discrete chunks of predetermined length, delivering a predetermined amount of discrete chunks into cans, delivering a predetermined amount of filler into cans (42) and sealing (44) and retorting (48) the cans to cook the pet food. The process provides moist pet food under conditions that minimise microbiological growth. |
