abstract A test method for determining the degree of blanching of vegetables such as peas, and fruits prior to freezing, by contacting a sample of the vegetable or fruit with a porous test paper, impregnated with 2,2'-azino-di-[3-ethylbenzthiazoline sulfonate (6)] diammonium salt (ABTS) as a chromogenic substrate for peroxidase in the presence of hydrogen peroxide and determining the degree of blanching as a function of the colour change of the chromogenic substrate.
