abstract | The amount of ingredient in a material, for example protein or carbohydrate, is ascertained by mixing the material with a reagent having a paramagnetic component and exhibiting a measured nuclear magnetic relaxation rate. The reagent is chosen so that the ingredient modifies the reagent and changes the measured rate. The magnitude of the change is then a measure of the amount of the ingredient present. Suitable reagents are solutions containing copper or manganese ions and the reagents may be alkaline or acidic and may include solvents and viscosity modifying agents. |
