abstract | The fishy smell in a packaged food product containing a fishy ingredient, particularly a dog or cat food containing fish flesh or offal, is reduced by incorporating therewith a non-toxic reducing agent, preferably in amount 0.1-5 wt% of the product. The food is then sealed in a container and subjected to heat sterilisation. Specified reducing agents are reducing sugars, aldehydes, ketones, cystine, cysteine, butylated hydroxy anisole, decithin, sodium ascorbate and inorganic sulphur compounds. The deodourisation reaction is unaffected by the presence of meat and cereals in the food. |
