The process consists in first extracting the proteins other than casein by placing skimmed milk in contact with at least one anion-exchange resin and silica, binding the proteins followed by elution, and in then separating the casein which has remained in solution from lactose and inorganic salts. Use of the process in the dairy industry for the preparation of proteins which can be used in the food, dietetic, pharmaceutical and veterinary industries. |
