abstract | 1527041 Solubilization of casein SOC DES PRODUITS NESTLE SA 12 Feb 1976 [20 March 1975] 05541/76 Heading C3H A process for the solubilization in powder form in aqueous suspension of casein, which suspension contains not more than 250 g. of casein/litre of aqueous medium, which comprises leaving the casein suspension to age (i.e. to become fully hydrated) for at least 10 minutes, after which a solubilization agent (i.e. an agent capable of causing the dissolution of the casein which is selected from a hydroxide, a basic alkali metal salt, a basic alkaline earth metal salt or a calcium complexing agent) is progressively added until a homogeneous solution (including colloidal solutions and gels) is obtained. The casein may be an acid casein, obtained by the precipitation of milk at the isoelectric point of the casein or by acid washing of a phosphocalcic casein or rennet casein, in which case the solubilization agent is an alkali and the pH is 6À5 to 7À0; or the casein may be a phosphocalcic casein or rennet casein, wherein the solubilization agent is a calcium-complexing agent. The calcium-complexing agent may be a phosphate, a citrate, a mixture of a citrate and a phosphate. The agent may be prepared in situ by addition (1) of citric acid or phosphoric acid at a pH of at least 4À6, followed by (2) addition thereto of an alkaline agent until a pH of at least 6À8 is reached if citric acid is used, and a pH of at least 7À5 is reached with phosphoric acid. The aqueous medium is preferably water and the process may be effected at a temperature of 20‹ to 70‹ C. Two specific embodiments of an apparatus are described. In the examples, the casein is (1)-(3) acid casein, (4), (5) phosphocalcic casein, (6) rennet casein, (7) acid-washed rennet casein; the solubilization agent is (1), (7) sodium hydroxide, (2) potassium hydroxide, (3) calcium hydroxide, (4) potassium phosphate, (5) citric acid/ potassium hydroxide, (6) trisodium citrate/ monosodium phosphate. |
