abstract | 1503035 Isomerization of glucose to fructose MITSUBISHI CHEMICAL INDUSTRIES Ltd and SEIKAGAKU KOGYO CO Ltd 25 June 1975 [26 June 1974] 26883/75 Heading C2S Glucose is isomerized into fructose by glucose isomerase in a process in which there is present in the reaction mixture iron ion together with magnesium ion. The glucose isomerase may be present in immobilized form, preferably adsorbed on an ion exchanger, e.g. a macroporous anion exchanger such as an anion exchange resin the matrix of which comprises a copolymer of styrene-divinyl benzene and the ion exchange group is a quaternary ammonium group, or adsorbed on a cyanogen halide derivative of cross-linked agar. Preferred sources of iron ion are ferrous sulphate, ferric sulphate, ferric chloride, ferrous ammonium sulphate, ferric ammonium sulphate, iron tartrate, or mixtures thereof and the preferred magnesium sources are magnesium sulphate, chloride, sulphite, carbonate or mixtures thereof. |
