abstract 1499023 Thick-thin starch derivatives AE STALEY MFG CO 5 March 1975 [28 May 1974] 9104/75 Heading C3U Thick-thin starch derivatives which exhibit thick viscosity characteristics upon atmospheric heating but which subsequently decrease substantially in viscosity upon continued heating in a sealed container comprise a root or roottype base starch modified with 0À05-6% acetyl groups substituted thereon giving a DS at 0À02 to 0À295 the starch being capable of forming a viscous, cooked paste when heated under atmospheric pressure, but further exhibiting a viscosity of less than 150 c.p.s. when heated in a sealed container for 20-60 minutes at 210-260‹ F. The starch may be tapioca, arrowroot, potato, sweet potato, yam, taro or waxy cereal starch (e.g. maize, milo, rice or sorghum). The starch may be preliminarily oxidized with 0À1-1% active chlorine.
