1484264 Cheese-like food product MARS Ltd 10 Oct 1974 [18 Oct 1973] 48665/73 Heading A2B A food product, particularly useful for domestic animals, comprises a compacted mass of acid-precipitated protein or curd having. particles of acid-fermented proteinaceous material distributed and embedded therein. The product is made, by subjecting the proteinaceous material to acid-producing fermentation, adding the fermented material to a colloidial solution of protein to cause a curd to separate and entrap the pieces of fermented material, and pressing the curd. In embodiments, comminuted meat, fish or offal is incubated with Lactobacillus casei, Streptococcus lactis or Lactobacillus lactis until the pH reaches 3.6-4.5 and may also be autolysed or proteolysed to produce a liquid or semi-liquid material. The fermented material is then' added to milk, milk solids dispersions, blood or soya milk. Meat or meat analogue chunks may be dispersed in the forming curd. and various additives, including antimycotic agents, may be present. The product may have pH 4.0-6.0 and may contain 15-50% protein. 3-40% carbohydrate, 2-12% fat and 25-60% water. |
