The roe is preferably salmon roe. The roe may be impregnated by contacting it with an aqueous solution of the sulphur-containing compound(s). The sulphur-containing compound may be the free acid or alkali-metal salt thereof. The roe after treatment may be packaged and stored under low temperature conditions.
