abstract A digestible product containing albumens in soluble form is obtained by subjecting blood, the fibrin of which has been caused to separate out on the surface, for example by agitation, to a freezing and thawing operation, by which the corpuscles are burst and the albumen contained therein made available. The product is then dried in vacuo on surfaces heated to a temperature above the coagulating temperature of the albumens, the degree of vacuum preferably being such that the liquid is evaporated about 30 DEG C., while the substance being dried is not heated above 40 DEG C. For this purpose a rotary drum dipping into the liquid may be employed. If desired, the fibrin may be removed prior to the freezing operation.
