abstract | Filamentary structures containing encapsulated fumarase are used for the enzymatic preparation of l-malic acid from solutions of fumaric acid salts. The fibres encapsulating the fumarase are obtained from polymers which can form fibres and are selected from esterified, nitrated cellulosics, polyolefins, polymers and copolymers of acrylonitrile, acrylates, methacrylates, vinyl esters, vinyl chloride, vinylidene chloride, styrene, polyamides or polyvinyl butyral, especially polymers of cellulose triacetate. The process makes it possible to achieve the enzymatic hydration of fumaric acid to give l-malic acid with remarkable ease; since the enzyme is immobilised, it can be used more than once and does not contaminate the product. |
