abstract 1425303 Reducing lactose in milk AGENCE NATIONALE DE VALORISATION DE LA RECHERCHE (ANVAR) 10 July 1974 [20 July 1973 3 Aug 1973] 30547/74 Heading A2B [Also in Division C2] Milk beverages free from lactose or of reduced lactose content are obtained by fermenting a lactose containing solution, e.g. lactoserum, whole milk, semi-skimmed or skimmed milk with a mutant non-pathogenic prototrophic microorganism containing #-galactosidase and which has got character. Many microorganisms are listed, the preferred strains being Kluyveromyces fragilis CBS 6498 and 6499 and #. Col: CBS 6051B. Where the microorganism is a yeast the product may be recovered together with the yeast to give a protein enriched feedstuff.
