abstract | Gallic acid is obtained by heating tannin with an amount of a metallic salt compound sufficient to effect a substitution of the hydrogen atoms of the carboxyl and hydroxyl groups formed on hydrolysis, and then decomposing the resulting gallate with an acid. An excess of the metallic compound is preferably employed, in order to coagulate the albuminous material. The metallic compounds referred to are the hydroxide, oxides, and weak-acid salts (e.g. carbonates and acetates) of the alkali and alkaline earth metals, magnesium, aluminium, lead, copper, and zinc. |
