abstract 1360968 Preservation and fermentation WINCANTON TRANSPORT & ENG CO Ltd 17 Aug 1971 [24 June 1970] 30689/70 Heading A2D [Also in Divisions B1 and C6] In a process for the fermentation of an aqueous nutrient medium in which the medium is sterilised or pasteurised in the vessel in which it is subsequently inoculated with a microorganism culture and fermented, all the apertures in the wall of the vessel are closed and the vessel containing the medium is immersed in a liquid covering the closed apertures and providing a seal against airborne contaminants during the sterilisation or pasteurisation, inoculation and fermentation. The aqueous nutrient medium may be supplied to a plurality of vessels which are subsequently immersed in a common tank. The aqueous nutrient medium may be milk, the resultant active starter culture produced by the above process being used in the manufacture of cheese. The process may be carried out in the apparatus shown in Fig. 1, which comprises outer tank 10 and pressure vessel 12, the latter being provided with an agitator 15, manway 25, a device 26 for cleaning the interior of the vessel, and a filler inlet 27 (Fig. 2, not shown). The manway 25 is also fitted with a boss 33 for the aseptic introduction of inoculum into vessel 12. The vessel is further provided with vacuum relief valve 37, pressure relief valve 38 and drain cock 45. Liquid (e.g. water) in the space between vessel 12 and tank 10 may be heated by means of steam injected via spray head 54, or by means of immersion heater 64. In use, vessel 12 is filled with aqueous nutrient medium via inlet 27, and this inlet is then closed. Water in tank 10 and surrounding vessel 12 is then brought up to and maintained at a suitable temperature, e.g. for sterilising or pasteurising the medium. During the heating, the medium is stirred by agitator 15. After this heat treatment, inoculum is introduced into the medium through the inoculation boss 33. The immersion heater may be used to maintain the medium at a suitable inoculation temperature. The treated medium is finally drawn off the apparatus at drain cock 45.
