abstract 1305370 Malting KURTH MALTING CORP 26 Aug 1971 [21 Sept 1970] 40107/71 Heading C6E In a process of malting in which a cereal grain (barley) is steeped, germinated and dried by kilning, (1) a sulphite, bisulphite or metablsulphite salt or mixture thereof so added to the grain after steep-out and before significant kilning of the germinated grain has occurred, and (2) an acidic substance, defined as one which, in the presence of moisture, reacts with the sulphite, bisulphite or metabisulphite salt to form the sulphite ion, is added to the grain after at least one day of germination and after significant rootlet growth has occurred. The additions amounting to between 500 and 8, 000 ppm of each based on the dry weight of the grain, may be made in granular form or as aqueous solutions. The acidic substance is typically added at least 4 hours after the sulphite &c. salt, though the two may be introduced in either order or contemporaneously. Sulphite &c. salts: sodium, potassium, calcium or magnesium sulphite, bisulphite or metabisulphite. Acidic substances mentioned: sulphuric, phosphoric, hydrochloric, nitric, acetic, citric, lactic, malic, tartaric and mono- or trichloroacetic acids, sodium or potassium acid sulphate, sodium dihydrogen phosphate, mono-sodium acid citrate and potassium bitartrate. The green malt may be treated with limewater with the object of curtailing the amounts of sulphite or sulphate ions in worts made from the malt.
