A spongy mass of protein particles is made by mixing protein particles with frozen particles of ice, snow, or solid carbon dioxide, compacting the mixture and removing the ice or carbon dioxide. In the Figure, milled particles of collagen, e.g. from cowhide and ice, snow or solid carbon dioxide are mixed in 20 and 22 and fed into a hopper 24 from which the mixture is removed by worm compacter 30 into tube 34 of decreasing internal diameter which has porous walls and is surrounded by vacuum chamber 38. Pump 56 and air conditioner 58 also supply air to tube 34 to remove vapour.
